Homemade nut butter!

We went a little crazy at Costco this weekend and got bulk bags of 4 different kinds of nuts. With autumn approaching we've been daydreaming about all the varieties of nut butters we can make + delicious seasonings mixed in. Cinnamon, pumpkin spice, vanilla - I can't wait. Literally. Here's what we concocted this weekend!

Making your own nut butter in a typical blender requires a little bit of added oil so it purees smoothly. As you can see, the sunflower turned out quite chunky while the macadamia is ultra creamy and smooth. Austin's hypothesis is that since the macadamias were the only ones roasted (all others were raw), this might affect the PUFAs at room temp? TBD.

If you prefer to avoid oil, you can add water instead but our results were mixed. We added honey but certainly that can be omitted to be keto-friendly.

Each recipe combined all ingredients in a blender and blended on high for 1-1.5 minutes.  Be sure to give your blender a break and push down anything that sticks to the sides of the blender! Also may help to get an inexpensive food scale (not an ad, just the one we use) if you see yourself doing this regularly so you can get the right ratio of nuts to oil and such, since each nut is a different size. 

 

    Better than Nutella Butter! (aka our Cacao Hazelnut Butter)

    • Hazelnuts, 13oz (2.75 cups)
    • Honey, 3.5oz (0.25 cups)
    • Cacao powder, 2oz (2/3 cups)
    • Avocado oil, 2oz (0.25 cups)
    • Cinnamon, 2.75 tsp
    • Salt, 1 tsp

    Macadamia Butter

    • Macadamias, 13oz (2.75 cups)
    • Avocado oil, 2oz (0.25 cups)

    Sunflower Butter

    • Sunflower seeds, shelled, 13oz (2 2/3 cups)
    • Honey, 2oz (2.5 tbsp)
    • Avocado oil, 2.75oz (1/3 cup)
    • Cinnamon, 2 2/3 tsp
    • Salt, 1 tsp
    • Water, 1oz

    Brazil + Pistachio Butter

    • Brazil nuts, 4oz (0.75 cups)
    • Pistachios, shelled, 9oz (2 cups)
    • Avocado oil, 2oz (0,25 cups)
