Easy Plantain Pancakes

Not only is this recipe grain free, packed with protein and antioxidants, it's quite easy - and it's PANCAKES! 

Recipe makes about 15 four-inch diameter pancakes

  1. Add to blender in any order:
    •  2 -3 scoops of protein powder to blender 
    • 1/2 cup of mixed berries
    • 4 whole eggs (pasture raised if possible)
    • 2 plantains (peeled and chopped)
    • 2 bananas (peeled and chopped)
    • 1 large or 1.5 medium chopped beets 
    • 1 cup almond milk (dairy milk and water fine too if you prefer)
    • cinnamon to taste
  2. Blend until its a smooth consistency (like regular pancake batter)
  3. Pour batter onto buttered fry pan, griddle, etc and  cook until light/medium brown on each side.
    • We usually flip it once the first side is firm enough so that we can flip without the pancake falling apart.
    • Smaller pancakes are a lot easier to handle but we have made batches of   4-5 large pancakes as well.

**You could omit dairy by using an alternative protein power. Recipe is pretty low fat as is, but could omit egg yolks. Sorry low carb folks. This one may not be for you.
