I became interested in health and exercise during college and decided to major in Nutrition Science. I took up running and even finished the Chicago Marathon in 2012. It was also totally painful. Ha! I have since gravitated towards weight training and hold powerlifting records for my weight class in Illinois.
I've worked in food communications and PR, served as a nutrition coach for the U.S. Rugby Women's National Team and as a consultant for a Major League Baseball team. For my day job, I'm a Research Dietitian at the University of Delaware. I plan and prepare menus for controlled feeding studies, and I love it! One of my goals for Ubuntu Fitness is to make sure we provide ideas that are healthful, tasty, and most of the time affordable for everyone.
